If you’ve noticed construction in the building across from The Harpeth Hotel in downtown Franklin and wondered what’s coming, the answer arrives this week. A new concept, The Franklin Butchery, is opening its doors on Friday, March 6th, bringing hand-cut meats, gourmet sandwiches, seafood, and prepared foods to downtown Franklin.

A New Butcher Shop in Franklin, TN

The idea for The Franklin Butchery grew out of a friendship between the Salaber and Tirado families, who often bonded over backyard grilling and shared meals. After repeatedly struggling to find the right cuts of meat at a local grocery store, they realized Franklin could use a true neighborhood butcher shop.

That idea became The Franklin Butchery, a shop designed to bring traditional butchery back to the counter. Inside, customers will find a butcher case stocked with locally sourced, hand-cut beef and pork, along with a visible cut room and a dry-aging program that highlights the craft behind the work.

Much of the meat program will focus on whole-animal sourcing from Bear Creek Farm, a Tennessee farm known for pasture-raised beef. By purchasing whole animals, the shop will offer everything from premium steaks to lesser-known butcher’s cuts while making full use of the animal.

Fresh Seafood and Sandwiches

The shop will also feature fresh seafood sourced from Maine, including lobster, oysters, and a rotating daily catch. Customers will be able to place orders in advance to secure seafood selections for special meals or gatherings.

While the butcher case will be the centerpiece, the shop will offer more than a traditional butcher counter. Visitors can also order gourmet sandwiches and burgers, prepared using many of the same ingredients available in the case. Sides will include items such as tallow French fries, a traditional preparation that uses rendered beef fat for flavor.

For customers looking for an easy dinner option, The Franklin Butchery will also offer chef-prepared meals and sides designed to reheat at home.

Experienced Culinary Team

The team behind the shop brings significant culinary experience. Executive Butcher Carlos Tirado has more than a decade of experience in whole-animal butchery. Executive Chef Greg, whose career includes time at the Hotel del Coronado and work in the kitchens of chef Wolfgang Puck, oversees the prepared foods and sandwich offerings.

A Space for Gatherings

The space is also designed to serve as a gathering spot. In addition to its retail counter and kitchen, The Franklin Butchery includes a private rental space for special events, dinners, and celebrations.
