Check out these quick, easy and delicious recipes! Instead of having to cut recipes in half, try these single serving recipes if you are dining alone. All the portions are small and help avoid having leftovers. Just multiply quantities if you are serving more.


Chicken Caesar Wrap
(serves 1)
Wrap up your greens and proteins to create this tasty wrap. It’s great way to use leftover chicken and extra salad.

-1 tortilla
-1/2 chicken breast
-2 tsp Tony’s Seasoning
-2 tbsp. Caesar dressing
-croutons (optional)
-handful of spinach leaves
-1 tbsp. parmesan cheese

Bake chicken breast if not already cooked. Cut chicken breast into strips, sprinkle with 1 tsp of Tony’s and toss. Heat in microwave 30 seconds if desired.

Place tortilla between two paper towels and heat for 20 seconds. Spread Caesar dressing on tortilla, place chicken and croutons in a line down the middle, leaving room on all sides. Put spinach on top and sprinkle with parmesan cheese. Roll up tortilla into a wrap and enjoy!

Black Bean Taco Salad (serves 1-2)
This is a great way to cure cravings for Mexican food. Use whatever veggies you like and adjust portion sizes to fit any dietary restrictions.


-bag of Romaine lettuce
-can of black beans
-1 ½ tbsp of taco seasoning
-1 avocado
-1 tomato
-crushed up tortilla chips
-shredded monetary jack-Colby cheese
-2 tbsp sour cream

Heat can of black beans in a saucepan on high. When beans begin to bubble, stir in 1-1 ½  tablespoons of taco seasoning. While beans are heating, cut avocado and tomato into small pieces. Rinse lettuce and toss with crushed tortilla chips. Add avocado, tomato and shredded cheese. Add black beans and top with 2 tablespoons of sour cream.

Variations:
-Use ground beef, ground turkey or chicken instead of black beans. Follow cooking instructions on taco seasoning package. Or if you want to meat and beans, heat beans and prepare meat with taco seasoning.
-Instead of sour cream, use a chipotle ranch dressing, salsa or taco sauce.


Chinese “Take Out"
(serves 2)
Too lazy to cook? Instead of getting takeout, cut grease & save money by creating your own Asian feast in minutes.

-1 package of Chungs frozen chicken egg rolls (2 rolls per serving)
-1 package Birdseye Steamfresh Whole Grain Brown Rice
-Frozen or fresh broccoli
-Soy Sauce

Bake egg rolls according to package directions. For 1 person, only bake 2 rolls and save any leftover rice for lunch. Sauté broccoli with soy sauce. With about 5 minutes left in cooking egg rolls, “steam” rice in the microwave. Put broccoli on top of rice and put any extra soy sauce on rice. Use duck sauce that comes with the egg rolls as dipping sauce.
