One of Franklin’s favorite dining spots, Stoveworks Restaurant offers light lunches to-go while at the same time adding low-calorie menu choices.  Famous for amazing Southern comfort food, Stoveworks owner Pat McCracken said the restaurant is responding to customer requests for light box lunches as well as new light restaurant options like skinny chicken salad and broth-based healthy soups such as chicken tortilla and Italian vegetable.

“Traditional choices like pimento cheese and fried chicken will continue as box lunch options while the Stoveworks chef, Callie Cottrell, has added a delicious, veggie spinach wrap with the low-fat red skinned potato salad and fresh fruit,” McCracken said.

“For over seven years, customers have enjoyed eating southern traditions in our charming courtyard style restaurant, ordering the bulk delicacies to go or using Stoveworks for catering events. Now we offer an even larger, yummier spectrum of food.”

McCracken said, in addition to the expanded box lunch menu, a star has been added on Stoveworks menu items to indicate reduced calorie options.  The restaurant has also added low-fat ranch dressing to its array of home-made choices.

Cottrell has her own tips for adopting the Southern chicken salad favorite for the home kitchen.  The 13-year chef recommends using light mayo and cutting the mayo quantity down by folding in plain, non-fat yogurt.  She also loves adding fresh fruit such as green or red grapes for additional moisture and taste while using one of her favorite herbs, tarragon, for the finishing touch.

“In everyday use, food can be light and flavorful without the extra calories,” Cottrell said.

Catering manager Christina Forewright said the boxes lunches must be ordered at least 24 hours in advance with a minimum order of 15. Deliveries are made within a 5-mile radius while pick-up at the convenient Franklin Road Factory location is always an option. Stoveworks famous fruit tea is always available for take out and box lunches range in price from $8.50 to $10.50.

Stoveworks Restaurant, a tradition since 2000, specializes in delicious, authentic Southern cooking served at lunch time Monday through Saturday as well as Sunday brunch. Box lunches, hot food and a variety of salads are available for office lunches, tail gate parties or picnics. Fine food and staff are also available to cater any event including wedding receptions and parties with private rooms available at the historic Factory location.
