Refreshed restaurant, expanded menu and Nashville touches mark a new chapter for the New Orleans-born brunch destination

NASHVILLE, Tenn. (July 22, 2026) – Ruby Sunshine has introduced a new chapter for its Hillsboro Village restaurant with a redesigned interior, updated menu and Grab & Go offerings, all rooted in the Southern hospitality and made-to-order cooking that have long defined the brand.

Guests will immediately notice a refreshed color palette, new plateware and locally inspired design elements, including a wall of ruby red cowboy boots. Just inside the entrance, a new Grab & Go welcomes a convenient stop for guests grabbing breakfast between classes, picking up lunch or fueling a busy day in Hillsboro Village.

“Great restaurants evolve with the communities they serve,” said Howard Greenstone, longtime Nashville restaurateur who helped guide the transformation. “This refresh gave us the opportunity to rethink every aspect of the guest experience. Every change was intentional, from a greater emphasis on quality ingredients and chef-driven dishes to design touches that reflect the energy and character of Hillsboro Village.”

The menu builds on guest favorites from Ruby Sunshine’s sister restaurant, Ruby Slipper, while introducing lighter fare, expanded lunch offerings and premium ingredients, including bacon and sausage from Kentucky-based Broadbent. New menu highlights include:

  • Biscuits Baked by the Hour: Warm buttermilk biscuits now baked by the hour and available in Jalapeño-Cheddar and other daily rotating flavors, served with local honey butter and seasonal jam.
  • Playfully Updated Breakfast Selections: New malted pancake batter serves as the foundation for menu additions including Pancake Sandwiches filled with fun combinations like Mac & Cheese and PB&J. Guests can also enjoy Fried Chicken & Waffles and Chilaquiles.
  • Expanded Lunch Favorites: A broader lunch lineup available beginning at 10:30 a.m., featuring items like the Nashville Hot Chicken Sandwich, Pulled Pork Grilled Cheese and NOLA Shrimp Bowl.
  • Specialty Beverages: New coffee creations, including the Strawberry and Banana Cloud Iced Lattes, alongside nonalcoholic refreshers like the Ruby Colada and Sparkling Sunrise.

The new Grab & Go area makes it easier than ever to enjoy Ruby Sunshine on the go with breakfast burritos, yogurt parfaits, pastries, biscuits baked throughout the day and fried-to-order beignets, along with handcrafted coffee beverages, including the new Strawberry and Banana Cloud Iced Lattes and favorites like NOLA-style iced coffee.
